There are always a few recipes that I carry around from my mom that contain a lot more cheese and mayonnaise and other things than I eat now, but every now and then I’ll pull out one that I’m craving and think to myself, I wonder if I can make this healthier, vegan, or dairy-free… and that’s exactly what I did with this fish dish.
It’s baked so you don’t have to fry it, and I only used dairy-free cheese and sour cream, and even the breadcrumbs are gluten-free, but of course that’s up to you!
Make your meal even healthier. Tip:
To keep this dish healthy, it’s all about the side dishes! I chose wild rice and potatoes, but you can add a side of steamed broccoli and/or cauliflower or even just a salad. Don’t just go for fries! Oh, and don’t forget to keep the fish “Ocean Wise.” Look for the sticker or ask your fishmonger.

Make 2 fish fillets (double if necessary)
INGREDIENTS:
– 2 white fish fillets (I chose sole)
– 1/3 cup breadcrumbs (gluten-free if necessary)
– 1/4 to 1/3 cup vegan cheddar
– 2 tbsp nutritional yeast
– 1/4 tsp garlic salt
– 1 tbsp oil
– 1 spring onion, thinly sliced
– 1-2 tbsp vegan sour cream
INSTRUCTIONS:
Preheat oven to 400
In a food processor, pulse breadcrumbs, vegan cheddar cheese, nutritional yeast, garlic salt, and oil until coarse crumbs form. Then stir in the spring onions by hand.
Grease the bottom of an ovenproof glass dish and place the fillet(s) in it. Spread a thin layer of sour cream over the fish and then place the breadcrumb mixture on top, pressing it down so it sticks.
Bake in the oven for about 10 minutes or until the top is golden brown, the fish is cooked through and the center is warm. (Ovens vary and depending on the thickness of your fillet, the fish may need more or less cooking time, so keep an eye on it!).
Serve with wild rice and baby potatoes or a side dish of your choice.
